The history of the castle is rich and long. According to written sources, Bled Castle is the oldest Slovenian castle, and in recent times it has become an important culinary destination.
The restaurant is managed by the family company Jezeršek, and its development is in the hands of Chef Luka Jezeršek. Together with Executive Chef Blaž Demšar and Creative Manager Ana Šušteršič he creates traditional dishes in a modern and refined way. With the help of the local environment and providers, they create memorable experiences suitable for state protocol guests, tourist groups, and individuals.
The Bled Castle Restaurant is committed to preserving the gastronomic heritage of the Gorenjska region and Slovenia, so it prepares local and regional dishes in a modern and refined way.
The menu, both a-la-carte as well as the tasting menu, changes with the seasons, but the Dream of Krainerwurst, a selection of cured meat from Franci’s Pantry, and a selection of Slovenian cheeses paired with nuts and marmalades made by local producers are always available. These can be found on the menu as the Taste of Pastures, Mountain Flowers, and Slovenia’s Hidden Jewels.
One of the most popular dishes among the guests is the Tournedoss Rossini, a filet mignon prepared just right, with foie gras, bread crouton, onion marmalade, and aromatic truffles. Vegetarians love gnocchi that are served together with fresh, as well as pickled, vegetables or vegetable cream. These are upgraded with seasonal ice-cream. There is also something for vegans, as the menu always includes one vegan dish, which is adapted to seasonal and local ingredients.
When Blaž Demšar is not cooking, he is looking for inspiration among the pigs and cows in his own barn.
The friendly and promising young chef comes from the nearby hills surrounding the Poljane Valley. Together with Luka Jezeršek and Ana Šušteršič, he creates offerings and standards for the dishes which they then prepare for a wide variety of guests who visit the famous Bled Castle every year.
He has been working with the Jezeršek family since he was at university, and he is not shy about sharing that he loves everything that is fried.
