Chef Mitja Humar gets his culinary inspirations from the panoramic views of Brda.

About chef

Chef Mitja Humar is a man on a mission.

Driven by passion, he has been committed to the kitchen from an early age, but his decision was finally sealed when he traded his studies in civil engineering to pursue his earliest interest. What motivates him most in his work is the search for new combinations of flavours and ingredients that reflect the values and traditions of the Brda region and Gredič restaurant.

Oven baked pork leg

When having a meal with his family, he loves oven-baked pork leg, because he loves simple and delicious traditional Slovenian food.

Eggs

Because they can be used in 101 ways.

He focuses on the flavours of nature, which he finds everywhere from his doorstep, where Gredič’s herbs grow, to the view from Brda – the sea on one side, the Alpine peaks on the other. All the while, he remains curious and seeks innovative approaches to cooking. Mitja is also an olive and fruit grower in his spare time, so he always likes to incorporate these ingredients into his creations.

"Cuisine for everyone."

When creating menus, he always pursues a vision of fresh, quality, seasonal dishes, and has no problem listening to the needs and wishes of his guests, because with the rise of different diets, it would be a shame if those people who have certain limitations could not enjoy fine cuisine. With such adaptations, Chef Mitja maintains his style as much as possible, but above all his essence, which is to serve the guest a superb dish. He says there is no better feeling than when you come out of the kitchen and a guest tells you that it was the best dinner they have ever had.

He draws his inspiration from the environment and historical influences

Chef Mitja Humar enjoys collaboration and appreciates his colleagues. He likes to emphasise that the kitchen is not just about the chef, but about a team that is well-coordinated and motivated to achieve good results and satisfy the guests. He encourages the best qualities and skills in each of his colleagues, and the result is perfect and tasty dishes.

The unspoilt nature of Brda and its bounty offers an inexhaustible source of inspiration for the chef when preparing culinary experiences. He combines delicate Mediterranean influences with stronger continental flavours and spices up the rich Slovenian heritage with a pinch of international flavours that have come to us over the centuries.

All these qualities have contributed to numerous culinary awards, with the icing on the cake being the inclusion of Gredič Restaurant in the Michelin Guide. It is the first restaurant in Brda to receive this distinction.
